Sunday-A Cooking Day

So it is a scheduled rest day in this last week of marathon training. Next week, around this time, I will be on my way home, hopefully not too sore!

I tried some new things, spaghetti squash today, oh I LOVED it!!! Soo good! It's so easy to fix, I just cut it in half, cut out the seeds and pulp stuff, placed it in a pan with 1/4 cup water, covered it with plastic wrap and micro-waved them for 10 minutes!

Breakfast: Whole Wheat cereal with cinnamon and splenda, orange: 185 calories

Lunch: Spaghetti squash with spaghetti sauce, zucchini, sweet potato: 425 calories

Snack: Hummus and pita bread, tea with half and half: 140 calories

Dinner: Spaghetti squash with spaghetti sauce, zucchini, sweet potato, apple:  375 calories

Snack:  Cereal, popcorn:  250 calories

Total Calories:  1375 calories

So, Amy, where are you girl?  Well, I know where you are, putting up Christmas decorations in October, but, where are your posts, I feel so lonely on here!!! HA! HA!
